Ingredients

green beans, trimmed 1 pound
potatoes, peeled and cut into large chunks 2 medium
cooking oil 2 tablespoons
scallions, thinly sliced 2 stalks
garlic cloves, minced 3 cloves
soy sauce 2 tablespoons
salt to taste
water enough to cover

Instructions

Prepare the vegetables

Wash and trim the green beans, removing any tough ends. Peel the potatoes and cut them into large chunks.

Sauté the aromatics

Heat oil in a large pot or deep skillet over medium heat. Add the sliced scallions and stir until fragrant.

Add the green beans and potatoes to the pot. Stir-fry for a few minutes until the green beans turn bright and the potatoes begin to lightly brown.
