Cherry Clafoutis

A smooth batter of eggs, sugar, flour, and milk is poured over canned cherries and baked until set.

Cherry Clafoutis

Ingredients

eggs 2
caster sugar 95 g
cake flour (sifted) 50 g
milk 250 ml
salt a pinch
unsalted butter (melted) 15 g
cherry brandy 1 tbsp
purple cherries (canned) 12

Instructions

Mix the eggs and sugar together

Place the eggs and caster sugar in a bowl and whisk together.

Add the cake flour and mix until smooth

Add the cake flour and stir until there are no lumps.

Add the milk and mix well

Add the milk and mix until evenly combined.

Whisk until smooth and creamy

Whisk with a mixer until the batter is completely smooth and creamy.

Add the salt and mix well

Add a small amount of salt to bring out the sweetness, then mix well.

Add the melted butter and mix well

Add the melted butter and mix until fully incorporated.

Add the cherry brandy and mix well

Finally, add the cherry brandy to flavor the batter. If you do not like alcohol, you can omit it.

Pour the batter into the gratin dish with the cherries

Scatter the cherries across the bottom of a gratin dish, pour in the batter from step 7, and bake in an oven preheated to 190°C (375°F) for about 40 minutes. Best served warm.
