Cherry Clafoutis
Classic French cherry clafoutis, a traditional children's dessert featuring cherries baked into a delicate custard.

cherries (washed, stemmed, and drained)
600 g
salted butter (melted, plus 20 g extra for greasing the baking dish)

eggs

flour

caster sugar

vanilla sugar

1 pinch
powdered sugar (for garnish)

Preparation and preheating
Preheat the oven to 210°C. Quickly rinse the cherries, stem them, and drain. Melt the butter in a small heavy-based saucepan.

Make the batter
In a large bowl, mix the flour, sugar, salt, and vanilla sugar. Add the eggs one at a time, then gradually pour in the milk while continuing to stir. Stir in the melted butter.

Assemble and bake
Generously butter the baking dish, arrange the cherries in it, then pour in the clafoutis batter. Bake at 210°C for 10 minutes, then lower the temperature to 180°C and bake for another 20 minutes.

Serving suggestion
Serve warm or at room temperature, lightly dusted with powdered sugar.
