Cherry Meatballs
Minced pork is shaped into cherry-sized balls, deep-fried, then tossed in a sweet and sour sauce.

Step 1
Finely chop the lean pork and pork fat into a paste and transfer to a bowl. Crack in the egg, add the fine salt, and stir to form a thick meat batter. In a separate bowl, combine the tomato sauce, sugar, vinegar, and nitrate water to make a sauce.
Step 2
Place a wok over high heat, add the vegetable oil, and heat to about 60% hot. Squeeze the meat batter into cherry-sized balls, drop them one by one into the oil, and fry until crisp on the outside and tender inside. Remove and drain.
Step 3
Pour off the excess oil from the wok and return it to high heat. Pour in the sauce and bring to a boil. Thicken with the wet starch slurry, add a small amount of sesame oil, drop in the meatballs and toss a few times, then transfer to a plate and serve.
