Instructions

1

Prepare Ingredients

Cut the Langshan chicken into 5cm cubes. Soak the dried yellow croaker in water until soft, clean it, cut into chunks, marinate with Shaoxing wine, scallion and ginger then rinse. Cut the ham into long rectangular blocks, place in a bowl, add Shaoxing wine and steam in a steamer.

2

Fry Chicken Pieces

Place a wok over heat, add peanut oil and heat to about 70% heat (approx 175°C). Toss the chicken pieces with soy sauce, add to the hot oil and fry until light golden, then remove and drain excess oil.

Stew

Place the wok back over heat, add the chicken pieces, Shaoxing wine, refined salt, white sugar, soy sauce, scallion and ginger. Pour in an appropriate amount of water and bring to a boil, then turn to low heat and simmer until the chicken is 60% cooked.
