Chilled Summer Fruit Soup

A chilled sweet soup built on strawberries and bananas, brightened with lime and lightly thickened with gelatin.

Chilled Summer Fruit Soup

Ingredients

water 2 pints 8 ounces
sugar 1 pound 8 ounces
lime juice 5 ounces
lime zest, grated 0.25 ounces
strawberries, sliced 8 ounces
bananas, sliced 12 ounces
gelatin 0.25 ounces
cold water (for soaking gelatin) 4 ounces
mixed fresh fruit for garnish (strawberries, raspberries, blackberries, etc.) to taste

Instructions

Step 1

Combine the sugar and water in a saucepan. Bring to a boil and stir until the sugar dissolves.

Add the lime juice, zest, strawberries, and bananas. Remove from heat, cover, and let stand until cooled to room temperature.

Strain the soup through a fine sieve. Let the liquid drip naturally; do not press the solids or the soup will turn cloudy.

Soften the gelatin with the cold water. Reheat the soup to just below a boil, add the gelatin, and stir until dissolved.

After cooling, chill in the refrigerator. The amount of gelatin is only meant to thicken the soup and will not cause it to set.

Prepare the garnish fruit. Keep small berries whole, and cut larger fruits into pieces as needed.

To serve, ladle the soup into soup plates and add the desired garnishes.
