Chocolate and Prune Cookies

Sandwich cookies filled with dark chocolate and dried prunes, with a rich texture reminiscent of soft chocolate cake.

Chocolate and Prune Cookies

Ingredients

Butter (diced) 150 g
Caster sugar (extra-fine) 150 g
Egg yolk 1
Cake flour 250 g
Cocoa powder (unsweetened) 25 g
Dark chocolate (chopped) about 90 g
Dark chocolate (for decoration) 50 g
Prunes (halved) 9

Prepare the dough

Preheat the oven to 190°C (setting 6). Line 2 baking sheets with parchment paper. In a bowl, cream the butter and sugar. Add the egg yolk. Add the flour and cocoa powder. Mix until a firm but smooth dough forms.

Cut the bases

Roll out one-third of the dough on parchment paper. Using a 5 cm round cutter, cut out 18 rounds. Place on baking sheets.

Fill

Sprinkle chopped dark chocolate in the center of each cookie.

Cut the tops

Roll out the remaining dough the same way. Using a 7.5 cm round cutter, cut out 18 'lids'. Carefully place them on the cookies and press the edges to seal (don't worry if the lids crack).

Bake

Bake for 10 minutes, until the cookies are slightly puffed and feel firm to the touch. Let rest on the baking sheet for 5 minutes to firm up. Transfer to a rack using a metal spatula to cool completely.

Decorate

Melt the chocolate over a bain-marie. Dip the halved prunes into the melted chocolate, then place one on each cookie. Drizzle the remaining chocolate over the prunes.
