Chocolate-Coated Snowballs

Ingredients

Chocolate praline ice cream (see page 118) 1 serving
or white chocolate ice cream (recipe as follows) 1 serving
or a mixture of both 1 serving
pure chocolate 250g (8 oz)

Instructions

1

Prepare the snowballs

Freeze the parchment paper for 10 minutes. Use an ice cream scoop to portion out balls of ice cream and place them on the chilled parchment paper; you'll need about 24-30 scoops.

2

Freeze to set

Return the tray to the freezer until the balls are very firm, about 2-3 hours.

3

First chocolate coating

Heat and melt the chocolate (see page 33), then set it aside to cool until slightly warm. Roll half of the ice cream balls in the chocolate coating, one at a time. Return them to the parchment paper and put them back in the freezer as quickly as possible.

4

Second chocolate coating

Repeat the previous step to coat all the remaining ice cream balls with chocolate. If the chocolate coating hardens, simply reheat and remelt it. The finished snowballs should be enjoyed the same day.
