Chocolate-Filled Walnut Cake
A rich chocolate-filled cake made primarily with walnuts.

Prepare the mold and yolk mixture
Use 20 g of butter to grease a 20 cm diameter cake mold and line the base with baking paper. Preheat the oven to 160°C (5/6 mark). Separate the egg yolks from the whites. Place the yolks and sugar in a bowl and whisk by hand until pale and fluffy. Then add the vanilla powder and flavor with rum.
Prepare the walnuts and egg whites
Reserve 12 whole walnuts and grate the rest. Whip the egg whites to stiff peaks with a pinch of salt. Fold the whites into the yolk mixture in two additions using a spatula, working gently.
Mix and bake
Fold the grated walnuts into the batter, stirring gently to avoid deflating. Pour into the mold and bake for 50 minutes. If the surface browns too much, cover with a sheet of baking paper. Remove from the oven, unmold onto a wire rack, peel off the bottom paper, and let cool completely.
Make the ganache
Chop the chocolate. Combine it with the cocoa powder, 30 g of butter, milk, and powdered sugar in a double boiler. Heat gently over low heat until the chocolate melts and the mixture is smooth.
Assemble and decorate
Slice the cake horizontally and fill with the chocolate ganache (you can place the cake on a concave plate to make handling easier). Smooth the surface using a spatula. Decorate with the whole walnuts. Refrigerate before serving.
