Chocolate Rum Fondue
A hot chocolate fondue made with chocolate, butter, and rum, served with fresh fruit, cake, and biscuits.
Ingredients
fine granulated sugar
125g (4 oz)
water
125 ml
European dark chocolate
180g (6 oz)
solid butter
60g (2 oz)
rum
50 ml
pound cake, angel food sponge cake, or plain cake (cut into 2.5 cm / 1 inch cubes)
ladyfingers or other plain cookies
fresh whole strawberries, fresh pineapple or pear slices, currants, orange segments, cherries, and other fruits

Make the syrup
Combine the sugar and water in a saucepan and heat over low heat, stirring slowly until the sugar is completely dissolved. Remove from heat and set aside to cool.

Make the chocolate sauce
Add the chocolate to the butter and heat together until melted (see page 34). Stir the melted chocolate mixture into the prepared syrup.

Assemble and serve
When ready to serve, warm the chocolate fondue in the microwave or use a double boiler. Stir the rum into the chocolate sauce until well combined, then pour into a chocolate fondue pot or a warming pot. The chocolate fondue should be enjoyed hot, accompanied by a variety of fruits, cookies, and cake cubes for dipping.
