Ingredients
cooking wine
30 g
vinegar
20 g
salt
2 g
MSG
5 g
shredded scallion
2 g
shredded ginger
2 g
sliced garlic
2 g
sesame oil
10 g
Instructions
1
Ingredient Preparation
Remove the head, inner membrane, and visible spine from the squid, score with a wheat-ear crosshatch pattern, and cut into diamond-shaped slices. Cut the cilantro into segments.
2
Blanching
Blanch the squid slices in boiling water until they curl up into rolls.
3
Slide-Frying and Seasoning
Heat oil in a wok over high heat until 60–70% hot, add the squid rolls and quickly slide-fry briefly, then remove and drain off the oil. Leave a thin layer of oil in the wok, add the scallion, ginger, and garlic to release their aroma, then add the squid rolls and cilantro, and season with cooking wine, vinegar, salt, and MSG. Drizzle sesame oil over the dish just before removing from the heat.
