Classic Brownies

Classic Brownies

Ingredients

unsweetened chocolate 1 lb (450 g)
butter 1 lb 8 oz (675 g)
eggs 1 lb 8 oz (675 g)
sugar 3 lb (1350 g)
salt 0.25 oz (7 g)
vanilla extract 1 oz (30 g)
bread flour 1 lb (450 g)
walnuts or pecans, chopped 1 lb (450 g)

Melting

Melt the chocolate and butter together in a double boiler. Allow the mixture to cool to room temperature.

Mixing Eggs and Sugar

Combine the eggs, sugar, salt, and vanilla extract evenly without whipping. Whipping introduces foam and adds airiness, which makes the brownies more crumbly and less soft and fudgy.

Combining

Fold in the chocolate mixture. Sift in the flour and fold gently until just combined. Fold in the nuts.

Panning

Pan method. Grease and flour the pan, or line it with baking paper. One recipe fills one full-size sheet pan (18 × 26 inches / 46 × 66 cm), or two half-sheet pans, or four 9 × 13 inch (23 × 33 cm) pans, or six 9 inch (23 cm) square pans. If desired, sprinkle an additional 50% (8 oz / 225 g) of chopped nuts on top of the batter before baking.

Baking

Bake at 325°F (190°C) for 45 to 60 minutes. Cut into 2 inch (5 cm) squares — 8 rows by 12 columns per full pan, for 96 pieces total.
