Ingredients

dried pasta (penne or rigatoni works well) 1 pound
ground pork 1/2 pound
crushed tomatoes 1 can (28 ounces)
yellow onion 1 medium, diced
garlic cloves 3, minced
olive oil 2 tablespoons
dried Italian herbs 1 teaspoon
salt to taste
black pepper to taste
Parmesan cheese for serving

Prepare the meat

Place the ground pork in a large bowl. Sprinkle with a pinch of salt, then knead the meat with your hands for about 2 minutes—it should become sticky and slightly pale. This technique tenderizes the protein and helps the sauce become silky smooth.

Start the sauce

Heat olive oil in a large skillet over medium-high heat. Add the onion and cook until softened and translucent, about 5 minutes. Toss in the garlic and cook until fragrant, about 1 minute more.

Add the prepared pork to the skillet, breaking it apart with a wooden spoon. Cook until the pork is no longer pink, about 7-8 minutes. The meat should be nicely browned with some crispy edges.
