Ingredients

Tofu (cut crosswise into thin slices, shaped into a fan, 2 layers on the bottom) 500 g
Lean pork (made into filling) to taste
Shrimp meat (made into filling) to taste
Egg white (made into filling) to taste
Water chestnut (peeled, made into filling) to taste
Scallion whites to taste
Tomato (cut into half-moon shapes, placed at the top of the fan) to taste
Shiitake mushroom (used for garnishing the fan surface) to taste
Eggplant (made into the fan handle frame) to taste
Sesame oil (sprinkled on the fan surface) to taste
Fine salt (used for seasoning the filling) to taste
MSG (used for seasoning the filling) to taste
White radish shreds (made into the fan tassel) to taste

Instructions

Step 1

Cut the tofu crosswise into thin slices and shape into a fan with 2 layers on the bottom; set aside.

Combine the lean pork, shrimp meat, egg white, and water chestnut into a filling, season with fine salt and MSG, mix well, then spread over the bottom layer of tofu. Cover with the top layer of tofu to form a sandwich.

Use the eggplant to build the fan handle frame. Cut the tomato into half-moon shapes and place them at the top of the fan. Use the white radish shreds as the fan tassel. Once the shape is complete, place in a steamer and steam for 5 minutes until cooked through.

Remove from the steamer, use the remaining garnishes to decorate a pattern on the fan surface, drizzle with sesame oil, and serve.
