Ingredients

glutinous rice flour 300 g
water 150 g
sugar 55 g
wheat starch 40 g
boiling water 30 g
cooked lard 55 g
red bean paste 300 g
desiccated coconut 300 g

Instructions

1

Step 1

Combine all of material A and knead until evenly mixed.

2

Step 2

Pour the boiling water from material B into the wheat starch to scald it, then add this to the mixture from step 1 and knead together until smooth.

3

Step 3

Add the cooked lard to the mixture from step 2 and knead until the surface is smooth to form the glutinous rice dough.

4

Step 4

Divide the dough into portions of about 30 g each and roll each into a round disc. Using the webbing between your thumb and index finger, wrap about 25 g of red bean paste inside to form the raw dumplings.

Step 5

Take a plate, grease the surface to prevent sticking, and place the shaped dumplings from the previous step onto it.
