Cold Celtuce and Glass Noodle Salad

Ingredients

Glass noodles (washed, rinsed with boiling water, cooled under cold water, cut into long strips) 200 g
Celtuce (peeled, first cut into long sections, then sliced into thin pieces, then cut into fine strips, blanched briefly in boiling water until just cooked) 150 g
Salt 1 tbsp
Sesame oil 1 tbsp
Vinegar 1 tbsp
Mustard powder (mixed with boiling water to thin it out, covered and set aside for 4-5 hours until cooled and fragrant, forming a mustard paste) 1 tbsp
MSG 1/2 tsp
Soy sauce 1 tsp

Instructions

1

Prepare the ingredients and mustard paste

Wash the glass noodles, rinse briefly with boiling water, then cool under cold water and cut into long strips. Peel and wash the celtuce, first cut into long sections, then slice into thin pieces, then cut into fine strips, and blanch briefly in boiling water until just cooked. Place the mustard powder in a bowl, pour in boiling water to thin it, cover, and set aside for 4-5 hours until cooled and fragrant to form the mustard paste.

2

Make the flavor sauce

In a small bowl, combine the soy sauce, vinegar, salt, MSG, and sesame oil to make a flavor sauce.

3

Toss and plate

Place the glass noodles and celtuce strips together in a serving dish, pour over the flavor sauce and mustard paste, toss well, and serve.
