Colorful Stir-Fried Naan

Last night Chengdu saw snowfall, but today it’s bright and sunny, with no sign of any accumulated snow outside the window. I haven’t witnessed snow in Chengdu for years. When I went out to stock up on supplies last night, I watched snowflakes drift through the glow of my car’s headlights on the ride home, and I felt so cheerful. Today I’m continuing to use up my leftover naan. Think of naan as a type of baked flatbread, similar to guo kui. I made stir-fried naan today, and it’s extra delicious when it soaks up a bit of sauce. I’m currently working hard to finish off the four pieces of naan left at home—I just hope I don’t finish them all before I realize I’ve grown to love this dish.

Story

Ingredients

onion to taste
green cabbage to taste
green bell pepper to taste
sweet bell pepper to taste
tomato to taste
purple cabbage to taste
pasta to taste
naan to taste
ginger garlic powder to taste
black pepper to taste
tomato sauce to taste
dark soy sauce to taste
light soy sauce to taste
white sugar to taste
garlic to taste
salt to taste

Instructions

Step 1

Cut onion, round cabbage, green bell pepper, and sweet bell pepper into shreds, dice the tomato, and shred the purple cabbage.

Cut the beef into strips, then marinate with black pepper, garlic powder, salt, cooking wine, and starch for at least 20 minutes.

Cook the pasta in a pot until tender, then drain and set aside.

Dice the garlic and put it in a bowl, then add 2 spoonfuls of dark soy sauce, 1 spoonful of light soy sauce, 1 spoonful of oyster sauce, 5 spoonfuls of tomato paste, and a small amount of white sugar, and mix well.

Cut the naan into small pieces.

Heat a pan with oil over high heat, add the beef strips, and stir-fry until the meat changes color.

Add the onion, sweet bell pepper, green bell pepper, round cabbage, and diced tomato in sequence, then stir-fry until fragrant.

Pour in the prepared tomato-garlic sauce and stir-fry until evenly coated.

Add the pasta and naan, stir-fry until evenly combined, season with a small amount of salt, then after plating, sprinkle with shredded purple cabbage.
