Ingredients
Napa cabbage (remove stems, cut into 1-inch tall pieces, 8 pieces total)
1500 g
Dried red chili peppers (washed, cut into fine strips)
25 g
White sugar
250 g
Aged vinegar
150 g
Sichuan pepper oil
1 g
Fine salt
10 g
Instructions
1
Steam the cabbage
Remove the stems from the napa cabbage and cut into 1-inch tall pieces (8 pieces total). Steam in a steamer until about 40% cooked. Wrap the pieces in a clean white cloth and squeeze out excess water, then unwrap to reveal drum-shaped pieces.
2
Sprinkle with chili strips
Wash the dried red chili peppers and cut them into fine strips. Sprinkle evenly over the drum-shaped cabbage pieces.
3
Pour the sauce
Combine the white sugar, aged vinegar, Sichuan pepper oil, and fine salt and stir well to make a sweet and sour dressing. Pour the dressing over the drum-shaped cabbage, let stand for 10 minutes, then serve.
