Cordyceps and Red Date Steamed Soft-shelled Turtle

Ingredients

Live soft-shelled turtle (cut into 4 large pieces after slaughter) 1 (about 1000 g)
Cordyceps (washed) 10 g
Red dates (soaked in boiling water and washed) 10
Cooking wine to taste
Refined salt to taste
MSG to taste
Scallion to taste
Ginger slices to taste
Garlic cloves to taste
Chicken broth to taste

Prepare the turtle

Cut the slaughtered soft-shelled turtle into 4 large pieces, place in a pot and bring to a boil, then remove. Score the four limbs and strip off the leg fat, then wash clean. Wash the cordyceps. Soak the red dates in boiling water and wash them clean.

Steam

Place the turtle in a soup bowl, top with cordyceps and red dates, then add cooking wine, salt, scallion, ginger, garlic, and chicken broth. Steam over water for 2 hours, remove, and pick out the scallion and ginger before serving.
