Crispy Fried Coin-Style Beef Sandwiches
A crispy fried dish made by stuffing beef slices, coating them in a light snowy batter, and deep-frying.
Ingredients
Instructions
Step 1
Finely dice the scallions and ginger, then crush them; soak the dried shrimp until softened, rinse clean, and dice together with the ham into small bits; pick over and wash the cilantro.
Step 2
Simmer the beef until just cooked through, then cut it into 20 round slices. Place the slices in a bowl with the scallions, ginger, cooking wine, star anise, and salt. Steam over high heat until about 80% tender, then remove and let cool.
Step 3
Mince the fatty pork into a fine paste and combine with the dried shrimp, diced scallion whites, ginger, Sichuan pepper powder, salt, MSG, sugar, and sesame oil. Mix well to form the filling.
Step 4
Lay the beef slices flat on a board, spread a layer of the filling on top, and cover with another beef slice to form a beef sandwich. In a deep plate, beat the egg whites until foamy, then stir in cornstarch and flour to make a snowflake batter.
Step 5
Heat cooking oil in a wok to about 150°F (medium heat). One by one, coat each beef sandwich in the snowflake batter and lower it into the oil. Sprinkle a few bits of ham and a cilantro leaf on top of each. Fry over medium heat until the bottom turns golden and the filling is cooked through, then remove and arrange on a serving plate.
