Crispy Pan-Fried Tofu

Story

This classic home-style dish gets its name from the contrast between the golden-brown exterior and the soft white interior of the tofu. The key is patience—let the tofu develop a deep crust before flipping.

Ingredients

firm tofu 400g (14 oz)
vegetable oil 3-4 tablespoons
light soy sauce 2 tablespoons
dark soy sauce 1 teaspoon
sugar 1/2 teaspoon
garlic, minced 2 cloves
green onions, sliced 2 stalks

Prep the tofu

Drain the tofu and cut into 3cm cubes. Pat dry with paper towels to remove excess moisture—this helps achieve a crispy exterior.

Fry until golden

Heat oil in a wide pan over medium-high heat until shimmering. Carefully add tofu in a single layer. Fry for 3-4 minutes per side until deeply golden and crisp. Remove and drain on paper towels.

Make the sauce

Pour off all but 1 tablespoon of oil from the pan. Add garlic and cook for 30 seconds until fragrant. Stir in both soy sauces and sugar, then return tofu to the pan.

Finish and serve

Toss the tofu gently in the sauce for 1-2 minutes until evenly coated and heated through. Remove from heat, sprinkle with green onions, and serve immediately.
