Dice the tofu into 1cm cubes. Briefly blanch them in hot water to firm up, then drain. Finely chop the cooked salted egg yolks and slice the green onions.
Fry the Egg Yolks
Heat oil in a flat-bottomed pan over low heat. Add the chopped salted egg yolks and mash them while frying. Continue cooking until the yolks turn into a bubbling, sandy paste.
Combine and Serve
