Crispy Thousand Island Fish Strips

Ingredients

Fish fillet (cut into 6 cm long, pinky-thick strips) 200 g
Eggs (cracked into bowl, add a pinch of salt and beat well) 2
Breadcrumbs 50 g
Flour 1 tbsp
Thousand Island dressing 1 tbsp
Salt (part used for marinating fish, a pinch for egg wash) 1 tsp
Fish sauce 1 tsp
Ginger juice 1 tsp
Cooking oil 1 cup

Instructions

1

Step 1

Cut the fish into 6 cm long, pinky-thick strips. Place in a small bowl, add part of the salt, fish sauce, and ginger juice, then mix well and marinate to absorb the flavor.

2

Step 2

Crack the eggs into a bowl, add a pinch of salt, and beat thoroughly with chopsticks until well combined. Set aside.

3

Step 3

Coat each fish strip with a layer of flour, dip evenly in the egg wash, and finally coat with a layer of breadcrumbs, pressing gently with your hand so the crumbs adhere firmly.

Step 4

Heat the cooking oil in a wok to about 150 °C (50% hot). Add the fish strips and deep-fry until golden and cooked through. Remove, arrange on a plate, drizzle with Thousand Island dressing, and serve.
