Prepare the Ribs
Cut the pork ribs into segments about 4 cm long. In a bowl, whisk the egg with a splash of water, flour, and MSG. Toss the ribs in this mixture until they are evenly coated and set aside to marinate briefly.
Deep Fry
Heat a generous amount of oil in a wok or deep pan. Once hot, carefully slide in battered ribs. Fry them until they turn a deep golden brown and are cooked through. Remove and drain on a wire rack or paper towels.
Make the Glaze
Leave about 15 g of oil in the wok and return it to the heat. Add the sesame seeds, tomato ketchup, sugar, and vinegar. Stir-fry quickly for a few seconds until the sugar dissolves and the sauce bubbles.
Combine and Serve
Toss the fried ribs into the wok with the glaze, ensuring every piece is well-coated. Transfer immediately to a serving plate and enjoy while hot and crispy.
