Crispy-Top Fruit Cobbler

Crispy-Top Fruit Cobbler

Ingredients

all-purpose flour 2/3 cup
whole wheat flour 2/3 cup
unsalted butter (cut into small pieces) 2/3 cup (75 g)
turbinado sugar 1/2 cup
sunflower seeds 3 tbsp
sesame seeds 1 tbsp
rolled oats 3 tbsp
apples 4
blueberries (thaw if frozen) 1 1/3 cup
fresh apple juice 4 tbsp
turbinado sugar (for sprinkling over the fruit) 1 tbsp

Instructions

Preheat the oven

Preheat the oven to 350°F (180°C). Place the all-purpose flour and whole wheat flour in a large mixing bowl and stir evenly with a spoon.

Make the crumble topping

Add the butter. Rub the butter and flour together with your fingertips until the mixture looks like coarse breadcrumbs. Stir in the sugar, seeds, and oats.

Prepare the fruit

Peel the apples and cut them into quarters. Carefully remove the cores, then cut the fruit into bite-sized pieces.

Fill the baking dish

Place the apple pieces in a baking dish. Add the blueberries and pour over the apple juice. Sprinkle the sugar evenly on top.

Bake

Spread the crumble topping evenly over the fruit, then place the dish in the oven. Bake for 35 minutes, until the top is crispy and beginning to brown.
