Crispy Tossed Eel
A traditional Jiangsu cold appetizer featuring eel shreds deep-fried twice until crisp, then tossed in a savory seasoning sauce for an amber-black hue and a fragrant, crunchy bite.
Ingredients
Clean eel shreds (main)
250 g
Vegetable oil (seasoning)
800 g (actual use ~60 g)
MSG (seasoning)
2 g
Sesame oil (seasoning)
15 g
Soy sauce (seasoning)
15 g
Instructions
1
Initial Frying
Place the eel shreds into oil that has been heated to about 80% hot (roughly 170-180°C / 340-360°F) and fry for half a minute, then immediately lift them out.
2
Soak and Re-Fry
Afterwards, briefly soak the shreds in hot water, then return them to the hot oil and fry until crisp. Remove, drain off the excess oil, and arrange on a plate.
3
Seasoning
Stir the soy sauce, sesame oil, and MSG together into a sauce, then pour it over the fried eel shreds. Serve immediately.
