Crown of Semolina with Apricots

Crown of Semolina with Apricots

Ingredients

Coarse semolina (coarse wheat semolina) 125 g
Milk 500 ml
Fine granulated sugar 125 g
Butter (for greasing the mold) 25 g
Eggs (whole) 3
Vanilla extract (or vanilla powder) 1
Apricots (candied apricots, diced) 1 can

Instructions

Prepare the apricot sauce

Pour the syrup from the candied apricots into a small saucepan, add a small amount of water (optional), bring to a boil to concentrate, and set aside.

Mix

Once the semolina batter has cooled slightly, add 3 eggs and stir until smooth. Add most of the diced apricots.

Bake

Preheat the oven to 200°C. Grease the mold with butter (a ring mold works well). Pour the batter into the mold. Bake for about 30-40 minutes, until golden on top.

Decorate

Unmold the cake. Brush the remaining apricot sauce over the surface. Decorate with half an apricot and candied cherries. Serve warm or cold.
