Dan Dan Chicken
This Lu (Shandong) cuisine dish is shaped like a chicken and consists of stir-fried chicken slices, fried meatballs and fried bread slices.

Step 1
Mix 50 g chicken broth, 2 g salt, 3 g MSG, 5 g cooking wine, and an appropriate amount of wet starch to make a sauce. Slice the winter bamboo shoots and green/red peppers. Cut the bread into rectangular blocks 1.2 cm long, 6 cm wide, and 6 cm thick. Take 400 g of chicken breast, remove the skin and tendons, cut into slices, mix evenly with egg whites, 2.5 g salt, 5 g cooking wine, and an appropriate amount of wet starch, and set aside to marinate. Take the remaining chicken breast, remove the skin and tendons, mince it, place in a bowl, add minced scallion, minced ginger, MSG, 2.5 g salt, 5 g cooking wine, ground pork, and an appropriate amount of wet starch, and mix well to make a filling.
Step 2
Heat the wok over high heat, heat the vegetable oil to 60% hot, slip-fry the marinated meat slices together with the winter bamboo shoots and green/red peppers briefly in the oil, remove and drain. When the oil reaches 70% hot, place meatballs (extruded from the meat filling) into the oil, fry through, then remove and drain. Fry the bread until golden, remove and place on a plate, use 15 cm long bamboo skewers to skewer one meatball at each end, and lay them over the bread tray.
Step 3
Leave a little oil in the wok; once hot, add the chicken slices, green and red pepper slices, and winter bamboo shoot slices, pour in the prepared sauce, toss a few times, and serve in front of the bread tray. Arrange the deep-fried chicken head, spring chicken, and chicken wings on both sides of the bread tray to shape a chicken.
