Dharma Tofu

A tender, silky tofu dish with a rich golden-red color, served with shiitake mushrooms, golden ear fungus, and other vegetarian ingredients.

Dharma Tofu

Ingredients

large tofu (each cut into 10 small pieces) 2
raw wheat gluten 50 g
yellow fungus pieces 50 g
rehydrated shiitake mushrooms 50 g
flowering Chinese cabbage 60 g
vegetarian stock (specific amount not specified) to taste
fine salt 2 tsp
monosodium glutamate 1 tsp
sesame oil 1 tsp
white pepper 1 tsp
dark soy sauce 3 tsp
wet cornstarch 3 tsp

Instructions

Cut the tofu

Cut each piece of tofu into 10 smaller pieces.

Fry the tofu

Heat oil in a wok to about 70% hot, then deep-fry the tofu until lightly set.

Braise and finish

Using the residual oil in the wok, add all the above ingredients together, pour in the vegetarian stock, season with fine salt and monosodium glutamate, tint with dark soy sauce to a golden-red hue, sprinkle in white pepper, thicken with wet cornstarch, stir in sesame oil, plate, and serve.
