Diced Pork with Peanuts

Ingredients

Lean pork (cut into thick slices, pound loose with the knife and cut into cubes, then mix with salt and wet cornstarch) 200g
Peanuts (deep-fried until crispy) 150g
Scallion segments as needed
Garlic as needed
Cooking wine as needed
Sugar as needed
Aromatic vinegar as needed
MSG as needed
Cornstarch as needed
Broth as needed
Sesame oil as needed
Fine salt as needed

Preparation

Cut the lean pork into thick slices, pound loose with the knife and cut into cubes, then mix with salt and wet cornstarch. In a small bowl, combine the cooking wine, sugar, aromatic vinegar, MSG, salt, broth, and cornstarch to make a sauce. Deep-fry the peanuts until crispy, then remove them. Next, briefly fry the pork cubes in oil and remove.

Stir-frying

Heat oil in a wok over high heat. First sauté the scallions and garlic, then pour in the sauce and stir briefly. Immediately add the pork cubes and crispy peanuts, toss a few times, drizzle with sesame oil, and serve.
