Dough Ball Soup
This soup has a smooth texture and a rich, savory flavor. It is a good source of protein, carbohydrates, and iron.
Ingredients
Flour (mix with egg white to form a stiff dough, cut into small dice and roll into small balls)
50 g
Egg (use the white for the dough, drizzle the yolk later)
1
Shrimp (cut into small dice)
10 g
Spinach (washed, blanched, finely chopped)
20 g
Stock
200 g
Sesame oil
2 g
Salt
2 g
MSG
a pinch
Instructions
1
Make the dough balls
Crack the egg, take the egg white and mix with the flour to form a slightly stiff dough. Knead until smooth, roll out into a thin sheet, and cut into soybean-sized dice. Dust with a little flour and roll each piece into a small ball.
2
Prepare the side ingredients
Cut the shrimp into small dice. Wash the spinach, blanch it briefly in hot water, and finely chop.
3
Cook the soup
Pour the stock into a pot, add the diced shrimp and salt. Once it comes to a boil, drop in the dough balls and cook until they are done. Drizzle in the egg yolk, stir in the chopped spinach, and finish with a drizzle of sesame oil.
