Ingredients

flour 500 g
pork skin aspic 500 g
dried scallops, minced 100 g
dried shrimp, minced 50 g
fine salt 5 g
monosodium glutamate 5 g
dry yeast 10 g
superior stock 50 g

Instructions

Make the aspic filling

Combine the pork skin aspic with the superior stock, minced dried scallops, minced dried shrimp, fine salt, and monosodium glutamate until everything is melted together. Cool completely, then cut into cubes and set aside.

Proof the dough

Add the dry yeast and water to the flour, stir to combine, then knead thoroughly until smooth. Let rest and proof for 1 hour before using.

Wrap and steam

Roll the dough into a long rope and pinch off small pieces. Flatten each piece, enclose a cube of the aspic filling, and shape into a round bun. Arrange the buns in a steamer basket and steam over high heat for 8 minutes. Remove from the steamer, insert a straw into each bun, and serve immediately.
