Dried Shrimp Eggplant

Ingredients

eggplant (peeled) 300 g
dried shrimp (washed, soaked, chopped) 40 g
chopped scallions 2 tbsp
chopped pickled mustard 1 tbsp
red chili strips 1 tsp
ginger 2 slices
hot water 250 ml
light soy sauce (for gravy) 0.5 tbsp
oil (for gravy) 0.5 tbsp
sugar (for gravy) 0.5 tbsp
dark soy sauce (for gravy) 1.5 tsp
sesame oil (for gravy) 1 tbsp
water (for gravy) 3 tbsp

Instructions

Step 1

Wash the dried shrimp, soak until soft, then chop.

Peel the eggplant and place it in hot water. Add the ginger slices, cover with cling film, and microwave on high for 15 minutes. Drain well and arrange the eggplant on a serving plate.

Combine the sauce ingredients, chopped dried shrimp, scallions, pickled mustard, and red chili strips in a bowl. Cover with cling film, leaving a small opening for steam to escape. Microwave on high for 3 minutes, remove, and pour the mixture over the eggplant before serving.
