Ingredients

Durian flesh 100 g
Water (60g for blending into puree, 20g for soaking gelatin) 80 g
Gelatin sheets (broken into pieces and softened) 3 g
Whipping cream (whipped until streaks appear) 150 g
Fine sugar 25 g
Ladyfinger biscuits (for the base) to taste

Instructions

1

Make the durian mousse mixture

Soak the gelatin sheets in 20g of cold water until soft. Blend the durian flesh, fine sugar, and 60g of water into a puree. Heat the softened gelatin sheets together with the water over a double boiler until melted, then pour into the durian puree and stir until evenly combined.

2

Fold in the whipping cream

Whip the cream until streaks appear on the surface. Pour into the durian puree and fold gently with a whisk until evenly combined.

3

Pour into cups and chill

Pour a suitable amount of mousse mixture into the bottom of each cup, lay a small piece of ladyfinger biscuit on top, then fill the cup with more mousse mixture. Chill for about 4 hours until set. Sprinkle with matcha powder before serving if desired.
