Earthworm Stewed Chicken

Ingredients

Live earthworms (place in basin for 3 days to expel mud, split open and wash clean) 150 g
Dressed hen (blanched in boiling water, then rinsed) 1 (approximately 1000 g)
Cooking wine to taste
Fine salt to taste
MSG to taste
Scallion segments to taste
Ginger slices to taste
Sugar to taste
White pepper powder to taste

Preparing the ingredients

Place the live earthworms in a basin for 3 days until they expel all the mud. Split them open, wash them clean, and blanch them in boiling water. Blanch the dressed hen in boiling water, then remove and rinse clean.

Stewing

Place the dressed hen, earthworms, cooking wine, fine salt, MSG, scallion, ginger, and an appropriate amount of water into a pot. Bring to a boil over high heat, skim off the foam, then reduce to low heat and simmer until the chicken is tender and falling apart. Remove the scallion and ginger, sprinkle with white pepper powder, and serve.
