A classic and comforting dish, egg fried rice is the ultimate quick meal. It perfectly transforms day-old rice into a savory, satisfying bite, highlighting the simple harmony of fluffy grains and creamy scrambled eggs.

Ingredients

egg 2 pieces
rice to taste
chopped scallion to taste
ketchup to taste
salt to taste
cooking wine to taste
tomato

Instructions

Step 1

Beat one egg with chopped scallions and salt.

Add oil to a pan over medium heat. Use chopsticks to scramble the egg mixture. While it is still partially unset, scoop out the scrambled eggs and set aside.

Add leftover rice with a little water and stir-fry until heated through. Add a small amount of tomato sauce and salt, and stir-fry evenly. If the pan is too dry, add a splash of cooking wine.

After turning off the heat on the stir-fried rice, while still hot, add the eggs from earlier and toss a few times. The eggs will be fully cooked at this point, and will be incredibly tender and smooth when eaten.

Pan-fry another sunny-side-up egg and place it on top of the fried rice. Serve.
