Ingredients

fresh fish meat (can use mandarin fish or grass carp, sliced into thin slices) 300 g
salted bread (cut into same size and quantity as fish slices) 200 g
cooked ham (minced) 15 g
cilantro leaves (washed) 50 g
eggs (use only egg whites, beat with chopsticks until foamy, mix with dry starch to make snowflake egg batter) 4
peanut oil (for frying) 1000 g (actual use 100 g)
cooking wine 25 g
refined salt 2.5 g
MSG 1.5 g
white pepper powder 0.5 g
scallion (mashed, extract juice with cooking wine) 15 g
ginger (mashed, extract juice with cooking wine) 15 g
white sugar 1.5 g
dry starch (for mixing into snowflake egg batter) 50 g
sesame oil (drizzle over fish cutlet after frying) 15 g

Instructions

1

Marinate Fish Slices

Slice the fish meat into thin slices, 3 cm long and 3 cm wide. Mash the scallion and ginger, extract the juice with cooking wine. Add refined salt, white sugar, MSG and white pepper powder, then marinate the fish slices for 10 minutes.

2

Prepare Auxiliary Ingredients

Cut the bread into slices of the same size and quantity as the fish slices. Take the egg whites only, beat with chopsticks until foamy, then add dry starch and mix to make snowflake egg batter. Wash the cilantro. Mince the cooked ham.

3

Assemble and Shape

Lay the bread slices flat on a cutting board. Coat each fish slice with the snowflake egg batter, stick it onto the bread slice, then top with cilantro and minced ham.

4

Fry

Place a wok over high heat and heat the oil to medium heat. Add the assembled fish slices to the oil with the bread side facing down. When the bread is fried until crispy and golden brown, the fish is fully cooked. Flip and fry briefly, then remove from the oil, drizzle with sesame oil, and serve on a plate.
