End of Summer Vegetable Bake

Ingredients

cauliflower (broken into small florets (about 5 cups)) 1 small head
broccoli (cut into small florets (about 4 cups)) 1 medium bunch
onion (chopped) 1 medium
garlic cloves (minced) 2
butter 1 tablespoon
tomatoes (chopped) 2 medium
dried basil 3/4 teaspoon
dried oregano 3/4 teaspoon
salt 3/4 teaspoon
pepper 1/4 teaspoon
hot pepper sauce 1/4 teaspoon
eggs 4
half-and-half cream 1/3 cup
shredded Swiss cheese (divided) 1-1/2 cups (6 ounces)
shredded Parmesan cheese 1/4 cup

Instructions

Precook vegetables

Place cauliflower and broccoli in a saucepan with a small amount of water. Bring to a boil. Reduce heat to low; cover and simmer for 5-10 minutes until crisp-tender. Drain and set aside.

Saute aromatics

In a large skillet, sauté onion and garlic in butter until softened.

Combine mixture

Stir in tomatoes, seasonings, cauliflower, and broccoli. Cook uncovered until heated through, about 4 minutes, stirring occasionally. Remove from heat and set aside.
