Fava Bean and Winter Melon Soup

This simple summer soup celebrates fresh spring fava beans paired with cooling winter melon. The quick stir-fry step before simmering adds subtle depth to the broth.

Ingredients

Fresh fava beans, shelled 1 cup
Winter melon, peeled and cubed 200g
Soft tofu, cubed 150g
Vegetable oil 1 tablespoon
Water 3 cups
Salt to taste
Sesame oil 1 teaspoon

Prep the vegetables

Rinse the fava beans well. Peel the winter melon and cut into bite-sized cubes. Cut the tofu into similar-sized cubes.

Build flavor in the pot

Heat vegetable oil in a medium pot over medium heat. Add the winter melon cubes and stir-fry for about 1 minute until they begin to soften slightly.

Simmer the soup

Add the fava beans and tofu to the pot. Pour in the water and bring to a rolling boil. Reduce heat and simmer for 2 minutes just until the beans are tender.

Season and serve

Remove from heat. Stir in salt to taste and drizzle with sesame oil. Serve warm.
