Fermented Tofu Braised Pork Ribs
Golden-red, tender pork ribs with a sweet-salty flavor and rich fermented tofu aroma.
Ingredients
pork ribs (cut into 4 cm segments, washed, drained)
1.5 kg
soy sauce (a little for marinating, the rest for braising)
130 g
fine salt
5 g
white sugar
50 g
fermented tofu brine
80 g
cooking wine
10 g
scallions (cut into segments)
50 g
ginger (sliced)
15 g
cornstarch slurry (part for marinating)
80 g
vegetable oil (for frying)
2 kg (250 g actually consumed)
water (enough to cover the ribs)
to taste
Instructions
1
Prepare and deep-fry the ribs
Cut the scallions into segments and slice the ginger. Chop the ribs into 4 cm segments, wash them, drain well, and place in a bowl. Add a little soy sauce and cornstarch slurry and mix evenly. Deep-fry in hot oil until golden red, then remove from the oil (fry in 3 batches).
2
Braise to absorb the flavors
Place the fried ribs into a pot. Add water (enough to cover the ribs), the remaining soy sauce, fine salt, white sugar, cooking wine, scallion segments, ginger slices, and fermented tofu brine. Bring to a boil over high heat, then reduce to low heat and braise until they are tender and falling apart.
