Fish-Fragrant Sea Cucumber

Ingredients

Hydrated sea cucumber (washed, cut into long strips) 250 g
Minced scallion 10 g
Minced garlic 5 g
Minced ginger 5 g
Shaoxing wine 10 g
Soy sauce 20 g
Sugar 3 g
Vinegar 5 g
Peanut oil 50 g
MSG 1 g
Salt a pinch
Dried chili (for aroma) 1

Instructions

Prepare the Sea Cucumber

Wash the sea cucumber, cut it into long strips, then blanch briefly in a pot of boiling water. Remove and drain well.

Stir-Fry with Fish-Fragrant Sauce

Heat oil in a wok over high heat. Fry the chili briefly, then remove it. Use the infused oil to stir-fry the sea cucumber, adding the minced ginger, scallion, garlic, salt, Shaoxing wine, soy sauce, sugar, and vinegar. When the sauce is nearly dry, stir in the MSG, transfer to a plate, and serve.
