Flaming Crêpes (French Orange Crêpes)
A classic French dessert featuring orange-flavored crêpes presented with a tableside flambé.
Ingredients
Instructions
Melt the butter
Place the butter in a pan and heat until melted, swirling the pan to ensure the melted butter is evenly distributed across the bottom.
Add the lemon
Pour the lemon zest and lemon juice into the pan.
Add the orange juice
Pour in the orange juice.
Rub with the orange
Rub the cut side of the half orange across the surface of the pan once; this step prevents any unmelted sugar from sticking to the bottom and helps evenly combine all the ingredients in the pan.
Add the crêpe
Fold the crêpe in half twice to 1/4 size and place it in the pan.
Ignite the liqueur
Pour the Grand Marnier into a long-handled ladle and ignite it with a flame.
Flame performance
With the other hand, use a fork to pierce the top of the spiral orange peel and hold it high above the pan; slowly pour the flaming liqueur down along the peel—the flames look especially striking on the elongated orange peel.
Plate up
Remove the crêpe and place it on a plate alongside a scoop of vanilla ice cream.
Drizzle the sauce
Continue to reduce the sauce in the pan over heat until thickened, then drizzle it over the crêpe. If any lemon zest remains, sprinkle it over the ice cream as garnish to finish.
