French Rye Bread

Soft, sticky rye bread made with a generous amount of rye starter, dusted with flour on the surface for decoration.

Ingredients

Rye Starter III (see page 106) 1 lb 8 oz
Bread Flour 4 oz
Salt 0.33 oz

Instructions

Mix

Place the rye starter in a mixing bowl. Add the bread flour and salt. Mix on low speed for 10 minutes. The dough will be soft and slightly sticky, so it is difficult to handle.

Ferment

Ferment at a warm room temperature for 30 minutes.

Shape

Divide into 1 lb (500 g) portions. Shape into round or slightly oval loaves. Brush with water or spray with water and dust with flour. Proof at 85°F (27°C) for 30–60 minutes until the volume roughly doubles. Score the surface.

Bake

Bake at 450°F (230°C) for 40–45 minutes with steam.
