A refreshing, layered frozen cream cheese mousse made with cream cheese, orange purée, and yogurt.
Ingredients
Instructions
Step 1
Soften the cream cheese over a double boiler, then stir until smooth with no lumps.
Step 2
Heat the sugar and milk over a double boiler until the sugar dissolves.
Step 3
Add the ice-water-softened gelatin to the warm Step 2 mixture.
Step 4
Stir the concentrated orange juice into the orange purée until combined.
Step 5
Stir the yogurt into the Step 4 mixture until combined.
Step 6
Stir the orange sauce from Step 5 into the Step 3 mixture until evenly combined.
Step 7
Stir the Step 6 mixture into the Step 1 mixture until evenly combined to form the orange cheese paste.
Step 8
Fold the Step 7 orange cheese paste into the whipping cream whipped to soft peaks until evenly combined.
Step 9
Stir the Cointreau into the Step 8 mixture until evenly blended — this is the fresh orange cheese mousse.
Step 10
Line the bottom of the mold with plastic wrap, pour in half of the mousse filling, and smooth it flat.
Step 11
Place a chocolate cake disc slightly smaller than the mold on top and flatten it.
Step 12
Pour the remaining mousse filling over the chocolate cake disc from Step 11 and smooth it flat.
Step 13
Place a cake disc the same size as the mold on top of the Step 12 mousse, seal with plastic wrap, and freeze until set.
Step 14
Flip the mousse (so the cake disc is the base), heat the four sides of the mold with a kitchen torch, then lift off the mold to unmold.
Step 15
Cut the mousse into long rectangular blocks with a knife, spread a layer of clear glaze on top, then spread a layer of orange fruit filling in the center.
Step 16
Arrange orange slices and red cherries on top, brush with clear glaze, and serve.
