Freshly Ground Soy Milk
A freshly ground soy milk recipe enhanced with malt water for aroma and flavored with brown sugar peanut butter.
Ingredients
Soybeans (place into blender jar)
311 g
White sugar
81 g
Malt water (1/10 malt phenol plus 50 g boiling water, or 1/5 of a disposable spoon)

Brown sugar peanut butter (one disposable spoon = 3 g)

Water (first pour to cover beans 1 inch high, pour in remaining water after 2-3 minutes)

Brown sugar (for making brown sugar peanut butter)

Peanut butter (for making brown sugar peanut butter)

Malt phenol (dissolved in 50 g boiling water, used for malt water)
1/10 of a disposable spoon

Make Brown Sugar Peanut Butter
Combine brown sugar 3 g + peanut butter 5 g + boiling water 78 g, pour into a cup and stir until fully dissolved to make the brown sugar peanut butter.

Make Malt Water
Measure 1/5 of a disposable spoon of malt water (about 1.2 g); that is enough.

Grind the Soy Milk
Place 311 g of soybeans into the blender jar, add 81 g of white sugar, 1.2 g of malt water, and 8 g of peanut butter. Prepare 600 g of purified water; first pour just enough to cover the beans by about 1 inch, then start the machine to grind. After 2-3 minutes, pour in the remaining water directly and continue grinding for another 2 minutes to finish the freshly ground soy milk.
