Fried Cabbage

Ingredients

vegetable oil 2 tablespoons
garlic (minced) 2 cloves
tiny raw pink shrimp (optional) 3 ounces (1/3 cup)
cabbage (cored and cut into 1/4-inch-wide ribbons (4 to 5 cups)) ½ medium head
water (divided) 2 to 3 tablespoons
eggs 2
fish sauce or soy sauce 1 tablespoon
ground white pepper Dash
salt (optional)

Stir-fry cabbage

Heat oil in a pan over medium heat. Sauté minced garlic for 15 to 30 seconds until fragrant. Add shrimp (if using) and stir-fry for 1 minute until it turns opaque. Increase heat to high, add cabbage ribbons, and stir-fry vigorously for 4 to 5 minutes until bright green and semi-translucent. If the pan is too dry, splash in a small amount of water. Reduce heat to medium.

Add eggs

Push the cabbage to the sides of the pan, leaving an empty space in the center. Crack in the eggs, and gently scramble the yolks without mixing them into the cabbage. Stir-fry for about 2 minutes until the egg is partially set. Increase heat to medium-high and mix all ingredients together thoroughly.

Season and serve

Add 2 tablespoons of water, fish sauce (or soy sauce), white pepper, and salt (if using). Stir-fry quickly to ensure all ingredients are evenly coated with the seasoning. Serve immediately.
