Fruit and Nut Cookies

Fruit and Nut Cookies

Ingredients

dried apricots 1/2 cup
flour (whole wheat or all-purpose) 3/4 cup
rolled oats 3/4 cup
chopped hazelnuts (optional) 1/2 cup
unsalted butter 1 stick plus 1 tbsp
light brown sugar 75 g (2¾ oz)
honey 2 tbsp

Instructions

Preheat the oven

Preheat the oven to 350°F (180°C) and lightly butter two baking sheets. Cut the dried apricots into small pieces and place them in a mixing bowl.

Melt the syrup

Add the sugar and honey to the saucepan. Heat over low heat. Stir gently with a wooden spoon until the butter and sugar melt.

Mix the dough

Add the flour, oats, and nuts to the bowl. Mix with a wooden spoon. Cut the butter into small pieces and add to the saucepan.

Shape

Add the butter mixture to the bowl and combine. Place 5 spoonfuls of cookie dough on each baking sheet, leaving space between each.

Bake

Slightly flatten the cookies to about 2 inches (5 cm) in diameter and ½ inch (1 cm) thick. Bake for 15 minutes until lightly golden.

Cool

Remove the baking sheets from the oven and let the cookies cool slightly. Then transfer the cookies to a cooling rack to cool and crisp up.
