Fruit Oat Scones
Packed with dried fruits and grains for a satisfyingly crisp bite.

Instructions
Mix the dry ingredients with butter
Refer to steps 1–3 of the basic scone recipe on p.59: mix the dry ingredients, cut in the butter, and combine evenly.
Add the wet ingredients
Add ingredients B (egg yolk and milk) to the bowl from step 1 and bring the mixture together into a single mass with a bench scraper, taking care not to overwork the dough.
Shape and rest
Dust the work surface and rolling pin with a little bread flour (amount not included in the ingredients). Place the dough from step 2 on the surface and roll it out into a square about 2.5 cm thick. Neaten the edges by hand, wrap in plastic wrap, and chill in the refrigerator for about 30 minutes.
Cut out the scones
Place the chilled dough from step 3 on the floured surface and stamp out 9–10 rounds using a floured round cutter. When no more rounds can be cut, gather the scraps, reroll to 2.5 cm thick, and repeat.
Glaze and garnish
Arrange the rounds from step 4 on a prepared baking tray. Brush the tops with milk for glazing, sprinkle with a little granulated sugar, and garnish with the fruit oatmeal.
Bake
Bake step 5 in an oven preheated to 180°C for about 16 minutes. Serve warm with extra butter to taste.
