Fruit Terracotta Cup Jelly & Champagne Granita

Layer cantaloupe and assorted fruits in tubular molds, pour in grapefruit jelly mixture, chill until fully set, and serve with champagne slush.

Fruit Terracotta Cup Jelly & Champagne Granita

Ingredients

water to taste
granulated sugar to taste
white wine to taste
sheet gelatin (soaked in water) to taste
fresh grapefruit juice to taste
Kyoho grapes to taste
cantaloupe (laid at the bottom of the mold) to taste
mango to taste
raspberries to taste
blueberries to taste
pink-fleshed grapefruit to taste
champagne granita (for garnish) to taste

Instructions

Step 1

Place water, granulated sugar, white wine, and fresh grapefruit juice in a pot and heat over medium heat.

Add the water-soaked sheet gelatin to the mixture from step 1, stir to combine, then strain to make the jelly liquid.

Line the hose-shaped mold with cantaloupe, then arrange assorted fruits on top.

Pour the jelly liquid from the top, refrigerate for 1 day, and it is finished once it cools and solidifies into a terracotta cup-shaped jelly.

Remove the set terracotta cup-shaped jelly from the container, cut it, arrange on a plate, and garnish with champagne granita before serving.
