Prepare Fondant Pleats in Advance
Make fondant pleats (p.126). Dye 72 oz. of fondant dark blue, with 12 oz. used for the pleats and the remainder for the base.
Prepare the Base
Prepare the base and cover with the remaining dark blue fondant (p.123).
Make the Star of David
Mix 4 oz. of fondant with 1/4 tsp Gum-Tex, roll out to 3/16 inch thick, cut out Stars of David using the pattern, and let dry on a board dusted with cornstarch. Apply a mixture of pearl dust and lemon extract to the stars and let dry. Outline with royal icing using a #3 piping tip and let dry.
Bake the Cake
Bake 2 cake layers (each 1.5 inches tall, total height 3 inches), prepare after cooling, and cover with 96 oz. of medium blue fondant (p.119).
Assemble the Cake Top
Place the cake on the prepared base. Roll out 24 oz. of white fondant to 1/8 inch thick, cut into 13-inch squares, and adhere to the top of the cake with a wet brush.
Add Decorations
Adhere both sides of the pleats using diluted fondant adhesive, place the Star of David on the pleat, and support the side dots with small fondant balls.
Make Rope Decorations
Roll 12 oz. of white fondant into 4 strips, each 36 inches long and 1/4 inch in diameter. Twist two strips into a rope (p.121), attach to the side of the cake, and trim the ends. Repeat to make another.
